- 8 oz Reny Picot Double Crème Brie, rind removed and diced
- 16 large button or cremini mushrooms, stems removed
- 1/3 cup breadcrumbs (panko or regular)
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tbsp fresh parsley, chopped (plus extra for garnish)
- 1 tsp dried thyme or Italian seasoning
- 1/4 tsp salt
- 1/4 tsp black pepper
- Optional: 2 tbsp grated Parmesan cheese
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- Prepare Mushrooms: Clean the mushroom caps with a damp cloth and remove the stems. Arrange them open-side up on the baking sheet.

- Stuff the Mushrooms: Add a small piece of Reny Picot Double Crème Brie to each mushroom cap, then add the breadcrumb mixture, pressing gently to pack it in. Add a thin slice of brie to top it off.
- Bake: Bake the mushrooms for 15-18 minutes, or until the mushrooms are tender and the topping is golden brown.
- Serve: Garnish with extra parsley and serve warm as a savory appetizer or side dish.
